The reason people don't like Carol for being a douche and why they love Stark for being a douche is because there was no politics involved with Stark. He's portrayed as a self serving person from the start and even when he becomes Iron man he's still a self serving douche. By the start of movie 2 he literally has the line "I've successfully privatized world peace." It takes him all the way to the first Avengers movie and meeting Steve Rogers for him to finally understand the bigger picture and it is also that movie that haunts him all the way until Endgame. He's never meant to be seen as a hero until he takes a nuke up into space without knowing he'll be able to come back.

Carol is meant to be liked even for being a douche since the movie starts. You see how she struggled because people didn't give her a chance and she's just so great that they should have all given her that chance. Even in Endgame her personality is that she's so powerful that the Avengers can easily win because now they have her. It is annoying and even other characters had to point that out. Black Widow tells her that they work best as a team not one star and her back up singers. Rhodey tells her that everybody in the room is a superhero not just her. But she still doesn't get it. She helps them kill Thanos and it didn't solve anything and still she acts like she's invincible by the end of the movie. "Hey Peter Parker. You have something for me?"

okay, I wanna point this out because I realized this my first full time watching the Captain Marvel movie.
The whole point, why Captain Marvel is so replaceable and boring is because, she's supposed to be. At her core she's a human who just happened to get picked because she was a great pilot. If anyone else was better than her before the explosion that gave her powers, then she would be just a normal boring human again.

I always hated Iron Man because he never did really change. He's the incarnation of the US, made to make them feel better about being what they are and doesn't work unless you accept the lie inherent to their society. In practically every movie he's featured he is the villain; in Iron Man 2 he's guilty of the exact same thing his dad had another man sent to the Gulag for; in 3 the villains are objectively correct, especially the Mandarin, while the secondaries are pretty much the same as him.

Let´s not go into the rest where pretty much everything shit happens because of him. If Stark had died in the cave in the first movie, their world would have been objectively better.

for me the main difference between captain marvel and ironman is, ironman is human. As you pointed out, his behaviour is an act. he is flawed, makes mistakes; You can see yourself in him. Denver's on the other hand, looks down on humans. There laws don't apply to her and in the end she doesn't fight for humanity, but against the Kree. Her justice is rooted in her own personal agenda. She fights the kree because they did her wrong. Tony is a narcissist, wile Carol has a God complex.

Stark turned out the way he did mainly because they nailed a perfect casting with RDJ, and also because they stuck pretty close to the source material for his character. With the rest of the MCU they kind of did whatever TF they wanted to. He was a flawed hero just like he was in the comic books, very relatable to the audience, and RDJ was spot on personality wise with the comic character.

That reminds me of another character from a medical series: Gregory House.
He's arrogant, a misanthrope who doesn't seem to care about his patients or even his colleagues, says truths without consideration, breaks rules of the time, enters patients homes, politically incorrect, a drug addict… a jerk most of the time, he should be unlikable, but its brilliant and is funny, has charisma, has many flaws and feels human, behind his facade of someone who doesn't gives a fuck is a man who is suffering and you sympathize with him and further in the series you see him make mistakes and face the consequences of his ways. Writting a character like him, or Tony Stark in this case, doesn't seem that impossible yet Marvel Studios couldn't make Carol Danvers (aka Capn' Marvel) likable.
